Tonkotsu Ume Tsukemen

Discover our brand new Tonkotsu Ume Tsukemen (梅つけ麺).

 

A seasonal tsukemen inspired by spring, where our rich and deeply flavorful tonkotsu broth meets the refreshing acidity of ume (Japanese plum). A unique contrast between intensity and lightness.

 

In Japan, ume is a signature flavor of spring and early summer. It is at the heart of “ume-shigoto” (うめしごと), a traditional practice dedicated to the artisanal preparation of ume, and is widely used in dishes such as umeboshi. Its slightly tangy taste brings a refreshing and distinctive brightness.

 

At TAKESAN, we combine it with our tonkotsu broth to create a perfectly balanced, surprising, and highly indulgent tsukemen.

Served with fresh handmade noodles, tender chashu pork, crispy bean sprouts, minced pork, and fresh spring onions… a bowl that marks the change of season 🌸

Miso Katsu

Discover TAKESAN's new dish, Miso Katsu (味噌煮カツ) – a unique twist on the famous Japanese Katsudon, TAKESAN style!

This isn’t just a Katsu, it’s a fully homemade dish designed to offer you an authentic taste. Our generous portion of crispy, breaded pork is full of flavor without being heavy.

Enhanced by our special miso sauce, crafted with TAKESAN’s exclusive miso from a brewery with 240 years of tradition, this slightly sweet sauce brings a deep miso aroma and an explosion of umami that perfectly complements the pork.

Served in a Donabe (clay pot), this dish stays perfectly warm, allowing the egg to become ideally soft-cooked, adding a creamy, melt-in-the-mouth texture. Fresh cabbage and green onion bring a balanced, refreshing touch to the dish.
