In the heart of Nagano, where 50% of the miso consumed in Japan is crafted, a dream was born. Tetsuaki Takeda, a ramen artisan hailing from Nagano, embarked on a decade-long journey in Tokyo, fueled by an unyielding passion to create the perfect bowl of ramen. His relentless pursuit of perfection led him to a pivotal encounter with the owner of KOKUHEI-MISO, a miso factory in Nagano steeped in 240 years of history, famous for their hand-made Shinsu miso.
The Creation of a Culinary Masterpiece
Touched by Tetsuaki's unwavering dedication, the owner of KOKUHEI-MISO crafted a bespoke Shinsu miso just for TAKESAN, a testament to the melding of tradition and innovation. This exceptional miso became the soul of TAKESAN, enriching each bowl of ramen with a depth of flavor that resonates with centuries of craftsmanship.
In 2008, Tetsuaki opened the doors to his first ramen store, TAKESAN Donabe Ramen, in Nagano. Made with the unique hand-made miso from KOKUHEI, TAKESAN became an ode to heritage, a culinary sanctuary where the past and present coalesced into a harmonious blend. Served in a special-made donabe (claypot), it encapsulates the rich umami flavors and keeps it warm, especially welcoming for winter days.
